- Filling
3 tablespoons butter, melted and cooled
1/2 cup light brown sugar
1 1/2 teaspoons ground cinnamon
- Dough
2 cups flour
2 tablespoons granulated sugar
4 teaspoons baking powder
1 teaspoon kosher salt
3 tablespoons butter
3/4 cup milk
- Icing
4 oz cream cheese, room temp
1/4 cup (1/2 stick) unsalted butter, room temp
1 tsp vanilla
2 cups powdered sugar
Directions
- Preheat oven to 375’F
Filling - Stir melted butter, brown sugar, and cinnamon in a small bowl. Set Aside
- Dough
- Stir flour, sugar, salt, and baking powder together in a medium bowl.
- Cut in butter with a fork or pastry blender.
- Slowly add milk and stir until you have a crumbly dough.
- Knead dough with hands until it forms more of a uniform ball.
- Roll dough out onto a lightly floured surface into a rectangle until it is about 1/4″ thick.
- Spread filling evenly on dough.
- Roll dough into a log.
- Slice log into 6-8 even pieces and place into a greased or lined muffin pan.
- Bake at 375′ F for 15-20 minutes or until starting to get golden brown.
- Icing
- While muffins are baking, In a stand or hand mixer, cream together softened butter and softened cream cheese.
- Add vanilla and powdered sugar.
- Mix until combined.
- Spread on top of warm muffins!
